Beef and Mushroom Hot Pot

Beef and mushroom hot pot is a super delicious hot pot using sliced beefs and Japanese veggies and mushrooms.

Start by adding in 2 quarts of water to your donabe. Throw in a piece of kombu and turn on the head to medium high.

Once broth starts to boil add in all your veggies and place the lid on. in this pot I added enoki, shimeji, shiitake, kabu radish and its leaves and mizuna.

The veggies will take about 10 minutes to cook. After which, add in the thin cuts of tender beef and give it a stir. With the meat being so thin it should cook quite fast.

This is really good with lemon ponzu for dipping.

The donabe I have is from Toiro called Miso-shiru Nabe (large size) I’ve owned this one for many years and it’s my favorite pot!
