Dongchimi Guksu

Dongchimi Guksu is a perfect summer soup. It’s an ice-cold soup that will help cool you down and give you happy feelings all at the same time 🙂
You make this by using Water Kimchi (dongchimi) mixed with water and noodles and that’s basically it! You can add any veggies you like. I like mine spicy so I always use jalapeno peppers. The recipe below is my lazy version for 1 serving.

Ingredients:
A hand full of someyon noodles (eyeball it for the desired amount. You can also use Japanese somen noodles)
1 jalapeno
Dongchimi radish (jullien desired amount)
1 1/2 – 2 cups of dongchimi broth
1 cup of water
1/2 TB of vinegar
Spicy Japanese or Chinese mustard
Roasted sesame seeds
pinch of salt

Steps:
-First, make the broth. Add in the 1 1/2 – 2 cups of dongchimi broth and 1 cup of water.
-Cut the jalapeno and dongchimi radish and place in the broth. Place in the fridge to stay cold when you’re done
-Now boil the noodles for 3-5 minutes. Then take out the broth and immediately place the noodles directly into the broth
-Add the vinegar (more to taste if you like), spicy mustard, and a pinch of salt, and give it a gentle mix till the mustard is dissolved
-Sprinkle some roasted sesame seeds
Feel free to add some ice cubes to the dish to make it extra cold. Enjoy the cold soup!
