French Chicken Gravy

One of my favorite dinner recipes to make after a busy day, French Chicken Gravy. It’s perfect when you are craving a homemade dinner or great for a special occasion without much fuss. This is sure to impress!

French Chicken Gravy:

4 chicken breasts (or 2 breasts, 2 thighs)
1/2 white onion
2 garlic cloves
2 TB butter
1 cup heavy whipping cream
1-2 cups unsweetened vermouth (Trader Joes brand is my favorite. 1 cup for less gravy and 2 cups for more. I like more)
1 thyme sprig
1 bay leaf
1 Lemon wedge
Salt and Pepper to taste

-Chop the onion and garlic into chunks and set aside
-Salt and pepper your chicken on both sides and set aside
-Melt butter in a cast iron (or your favorite pan) brown chicken pieces on both sides
-Remove chicken, then add in garlic and onions and cook till fragrant and slightly soft
-Add in thyme sprig and bay leaf and mix gently
-Add in vermouth and bring up to a boil. Turn town heat and simmer for 8 minutes
-After, squeeze the lemon wedge juice into the pot and mix
-Add in heavy whopping cream and bring back up to a gently boil. Mix constantly till slightly thickened
-Plate chicken and pour the gravy mixture on top of chicken. Goes great with toast or mashed potatoes.
