Garlic Chicken and Mango Parsley Salad

Ingredients
1 whole chicken (look for a smaller one, easier to cook evenly)
5 garlic cloves
1 shallot
1 lemon
1 bunch of parsley
1 jalapeno
1 large leak (white part)
2 mangos
1 small bunch of your favorite baby tomato variety
Palm full of fresh mint leaves
Salt and Pepper to taste
Olive oil

Steps
-Preheat oven to 450 degrees
-Salt and pepper the whole chicken inside and out. Add the garlic cloves and half a lemon into the center cavity. Chicken is done when the juices run clear
-Add chicken to oven and cook for 45 minutes
-Chop the parsley into comfortable bites. Not too small, not to big. Discard the stem
-Cut the mango into squares and half the baby tomatoes and mix with parsley
-Slice the jalapeno, shallot, and leak, add to parsley mix
-Chop the mint so it’s very fine and add to parsley mix
-Drizzle on a little olive oil and season with salt and pepper to taste
Plate the salad first and when the chicken is done place it on top.
